So when I was done making the Southwest Chili I still had cooked chicken and some really good broth left. The Chili was good, by the way. But with the leftover chicken and broth I made Chicken and Dumplings, or my version of it. It was ok. I cooked potatoes, onion, and carrots. Dumped the broth and chicken in with the veggies and thickened it with a flour and water paste. For extra flavor and goodness, I also sliced in some raw garlic. I put in a 9x13 pan and dolloped my basic biscuit dough on top and baked it until the dough was nicely browned. So why was it so boring? Maybe the broth really wasn't that great.
Back to herbs: Sharon had a good idea - to preserve cilantro, chop it, put it into an ice tray and cover with water. Freeze, and when you want fresh cilantro, drop in a cilantro cube.
Susan says that we Menno's don't know how to use seasonings and herbs.
ReplyDeleteSo Susan's been saying that for a long time...so how about Susan tell us now how to use herbs? I don't think my cooking is that bad!!! And I even use herbs. Oh was she being punny?....as her husband is Herb.
